Apple Pie from the Dutch Oven

The Dutch oven is a cast iron pan that is ideal with a barbecue. In fact, you can use it to cook an additional dish without taking up a grill grid. All you need is a solid surface that can take a beating, such as an old sidewalk or patio tile. There will be glowing briquettes on this, so it’s best not to place the pan on your beautiful patio.
Dutch ovens have been around since the 17th century, but were not initially popular due to their heavy weight and clunky appearance. That changed during the 19th century in the United States when the pan proved invaluable to settlers on their trek west, to prospectors in mining camps and to cowboys on long drives. The Dutch oven was practically indestructible and multifunctional. The legs allowed it to stand over glowing coals. The handle allowed the pan to hang over a fire. And the lid with a high raised rim allowed coals to be placed in it so that it actually became an oven in which to bake bread. Or a nice apple pie.
