Grilled pineapple with vanilla ice cream

Although I'm sure they have a different opinion in Hawaii, I don't usually find the addition of pineapple to hot dishes to be a big deal. But exceptions confirm the rule. Warm pineapple from the grill, in fact, can be wonderfully delicious. That is, if you spice up the pineapple a bit with a marinade of rum, brown sugar, honey and cinnamon and serve it with a scoop of vanilla ice cream.
You can make such a dessert with slices from a can, but the taste becomes about a hundred thousand times tastier if you take a fresh pineapple. But even those become unpalatable if you don't scrub your grill grate thoroughly before grilling fruit.
Another tip: buy a ripe pineapple (it should smell strongly). Letting them ripen in the kitchen window for a few days is pointless, because after picking, a pineapple does not ripen further. Then you might as well cut off the head, plant it in the ground and wait for a new plant to grow. With a tropical summer, there's a chance it could work out, too. Let the fruit ripen long enough before you pick it, otherwise you can start all over again and be another year down the road.
