An American barbecue will truly never lack coleslaw. Although Americans originally adopted the idea for this coleslaw from us, we in the Netherlands have actually only started to taste the stuff since fast food chains like McDonald’s and Kentucky Fried Chicken came up with it. This is quite a shame, because it does not taste bad at all and is undeniably a great choice at barbecues, where it is a fresh counterpart to the intense flavors of spare ribs and chili con carne, for example.
Although coleslaw is usually served on the side in a bowl or at the edge of the plate, it is also common to use it as a topping for a sandwich. The recipe below is more or less the standard version common in The South, but each cook puts their own unique spin on coleslaw.
In certain parts of North Carolina, mayonnaise is replaced by tomato ketchup and vinegar. It is then called red salad or barbecue salad.
