Cajun Shrimp Skewer and Shrimp Po’Boy Sandwich

The Cajuns are an American ethnic group in the state of Louisiana that still speaks a kind of medieval French (similar to South African Boers in relation to Dutch). Their habitat is the delta of the Mississippi River, which flows into the Gulf of Mexico here. The Cajuns are known for their admittedly simple but outstanding (rural) cuisine. That cuisine is one of two reasons why the state of Louisiana is known as a culinary paradise. The other reason is the Creole cuisine from the neighboring city of New Orleans. That one is a little more refined, say, posh. Both cuisines often have their own version of the same dish that differ only minimally from each other. Both Cajun and Creole cuisine feature shrimp, which are abundant in the warm Gulf of Mexico.
With that, we are going to make a simple skewer for the barbecue in this recipe. But if you want, you can also make it into a tasty sandwich called a Shrimp Po’Boy. Officially, the shrimp are dipped in a batter and deep-fried for this purpose, but believe me, it tastes just as good right off the barbecue.
