Grilled pork chops with apple

In America, pork chops are among the most widely eaten meats, as they are not only incredibly delicious, but also quite affordable. They are also great to prepare on the grill, so no wonder they are a regular at barbecues. Now, American pork chops are not quite the same as our pork chops, but really not a whole lot of difference (other than the size) either, so there’s nothing stopping us from cooking these pork chops in a different way.
The terms chops and chops are often used interchangeably in the Netherlands, but there is a difference. When a piece of pork is cut to include a rib, it is a cutlet. All other small pieces of meat with bone are officially called chops. In addition to rib chops, we also distinguish shoulder chops and haunch chops. For barbecue, we prefer not to use rooster chops, as they contain no bone and become dry very quickly on the barbecue. By the way, in case you were wondering if pork chops really belong on a barbecue: the word derives from the Italian carbonata, which literally means “roasted on charcoal”).
